The wild Carrot originated in Persia, where for centuries, it was cultivated for its edible leaves and seeds. The roots were purple, white or yellow and considered too tough to be eaten. The orange form that we know today did not appear until the 17th century after the plant was introduced to Europe. These bright green leaves have deeply divided edges and a short stem.
