Yarrow has been used as a food and a medicine since ancient times. It is native to the UK and grows wild in meadows and hedgerows. The tall white flowers are attractive to a wide range of insects and the whole plant has a peppery, slightly bitter flavour. The soft feathery leaves have a finely divided structure and are fairly stiff once dried making them good for adding height as they can stand unsupported. The side leaflets can easily be snapped from the stem for using in delicate designs and they are completely edible.
